One thing that was a mandatory staple in our house, especially during the holidays, was my Babcia's homemade pierogi. I can't recall my Polish grandmother ever having a recipe card for her dough until later in life.
My mom, like her mother, seemed to recall how to make the dough off the top of her head. It was a pinch of this and a dash of that. This is where the phrase,"I don't need a recipe I'm Polish" originated for me. Luckily sometime in the early 1980's, my mom sat down with her mother and wrote out her recipe.
6 Cups of Flour
1/4 lb melted butter or margarine
1/2 Cup Milk
3-4 whole eggs
1/2-1 cup sour creme
1 tsp salt
Put flour & salt in the bowl
Add melted butter or margarine, milk, eggs & sour cream
Mix together into a dough that's easy to handle
Knead into a little ball.
Roll out the dough and fill with filling.
Cook pierogi a few at a time in boiling water.
When pierogi float to the top take out.
