How To Make My Babcia's Sour Cream Pierogi Dough

One thing that was a mandatory staple in our house, especially during the holidays, was my Babcia's homemade pierogi. I can't recall my Polish grandmother ever having a recipe card for her dough until later in life.

My mom, like her mother, seemed to recall how to make the dough off the top of her head. It was a pinch of this and a dash of that. This is where the phrase, "I don't need a recipe I'm Polish" originated for me. Luckily sometime in the early 1980's, my mom sat down with her mother and wrote out her recipe.

Sour Creme Pierogi Dough

  • 6 Cups of Flour
  • 1/4 lb melted butter or margarine
  • 1/2 Cup Milk
  • 3-4 whole eggs
  • 1/2-1 cup sour creme
  • 1 tsp salt


  • Put flour & salt in the bowl
  • Add melted butter or  margarine, milk, eggs & sour cream
  • Mix together into a dough that's easy to handle
  • Knead into a little ball.
  • Roll out the dough and fill with filling.
  • Pinch closed
  • Cook pierogi a few at a time in boiling water.
  • When pierogi float to the top take out
